After lauding the iced coffee at Sightglass, Tasting Table found a new iced coffee obsession. It's called Macua and it's a blend of coffee and sweetened milk inspired by trips to Macua, China. It sounds delicious, and it reminds me a bit of Yuanyang, a sweet, creamy mixture of coffee, tea and sweetened condensed milk that's popular in Hong Kong.If you'd like to make iced coffee at home, I suggest using cold-brewed coffee for a sweeter, smoother flavor profile and coffee ice cubes for an ice-cold coffee that doesn't get watered down. Ice coffee is really upping it’s game, It’s interesting what Sightglass is doing with this and am interested in following up on Macua preparation. Is it simply the high end ice coffee with sweetened milk or do they use any special processes or sweeteners to make it special? Thanks Theo
Good question! It’s a ristretto made with Blue Bottle Coffee and then mixed with whole milk and organic cane sugar syrup.
