What is Tea Patience?

Tea patience is a tea tasting term that is used to describe the way certain teas steep over multiple infusions. The term 'patient tea' is often used to describe rolled oolongs (like the Tiguanyin pictured above) and aged pu-erh teas, among other types of tea.
