Mocha. For some, just the name is enough to start the mouth watering. A decadent mix of chocolate and coffee, mocha is a flavor beloved by many and perfected by few. The trick is getting the strong flavor of coffee not to overpower the chocolate -- and vice versa! Mocha lattes are easy enough to tweak, but when it comes to making a mocha cake, you need to plan a little more in advance.
A few months ago, I tested various ways of making mocha cake and came up with this mocha cake recipe which (in my opinion) has an ideal balance of chocolate and coffee. (Most mocha cakes just taste like chocolate cake with a more bittersweet edge or slight roasted note. This one actually tastes like coffee.) Plus, the addition of coffee to the cake makes it extra dense and moist.
I recommend trying this recipe in the cooler months, preferably with a flavorful icing (such as chai frosting or coffee frosting) on top and a cup of hot coffee to the side.
