Biscotti all'Anise

A simple recipe, but even just a little anise will give it that distinctive licorice flavour.

Ingredients:

  • 3 eggs
  • 2 tsp anise extract
  • 3/4 cup sugar
  • 1 1/2 cup flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • Dash of salt

Preparation:

Preheat your oven to 350F. Mix eggs, anise, sugar and salt in a mixing bowl. Whip until very light, about 6 minutes (with a high speed hand mixer). In another bowl, sift together flour, cornstarch and baking powder. Fold together the egg mixture and flour mixture. Using a pastry bag (3/4 inch opening), pipe two logs of batter onto a greased pan. Logs should be 1 1/2 inches wide. Bake for 20 minutes, until golden. Remove from oven and let cool for 10 minutes. Use a serrated knife to slice the logs into 1/2 inch slices. Place the slices into the oven, and bake for another 12 minutes.
