Chocolate Coconut Layered Biscotti

Two different flavours of biscotti layered together, with coconut and chocolate. A bit more complicated than a regular biscotti recipe, so you might want to try this if you have some baking experience.

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 2 tbs vegetable oil
  • 1 tsp lemon juice
  • 1 tsp coconut extract
  • 2 3/4 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/2 cup coconut flakes
  • 1 cup raisins
  • 2 tbs unsweetened cocoa powder
  • 1/2 cup white chocolate chips

Preparation:

Beat eggs and sugar together, until light and fluffy. Add oil, lemon juice and coconut flavouring. Blend well. Add flour, baking powder and soda, and salt. Mix until smooth. Fold in raisins and coconut. Remove half the dough, onto a baking sheet. Shape into a loaf, about a half inch in height and 15 inches long. Add cocoa powder to the remaining dough, and stir through. Fold in chocolate chips. Remove dough and form into a log the same size as the first. Place chocolate loaf on top of white loaf, and press together. Bake in a preheated 350F oven for 25 minutes. Cool for 10 minutes, then slice into 3/4 inch slices. Return slices to the oven and toast on each side for 10 minutes.
