Ingredients:
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 4 eggs, large
- 3/4 cup sugar
- 1 tbs lemon zest
- 1 1/2 tsp lemon juice
- 1 cup toasted almonds
Preparation:
Preheat oven to 325F. Line a baking sheet with parchment paper. Sift flour, baking powder and soda, and salt together in a mixing bowl. In another bowl, beat eggs and sugar together, then beat in lemon juice and zest. Add flour mixture to egg mixture and gradually mix together.Stir in almonds. On a floured surface, knead dough for 2 minutes. Divide dough in half and shape into 2 logs. Bake for 30 minutes, or until golden brown. Remove biscotti from oven and cool completely. Reduce oven temperature to 300F. Slice log into 1/2 inch slices, and put slices back on baking sheet. Bake for another 20 minutes.
