Cardamom Coffee Cake

A basic recipe for a yeast coffee cake, but with the spicy hint of cardamom. Well, cardamom is excellent in chai tea, so why not in coffee cake too.

Ingredients:

  • 1 1/2 cups milk
  • 3/4 cup sugar
  • 1/2 cup butter
  • 3 egg yolks
  • 6 tbs sugar
  • 1 pkg cake yeast
  • 6 1/4 all purpose flour
  • 1/4 tsp salt
  • 1 tsp cardamom
  • 2 tsp milk

Preparation:

Preheat oven to 375F. Scald milk, then let cool down to lukewarm. Add yeast and 1 tsp sugar. Beat in 3 cups of flour until smooth. Cover and let rise until doubled (about 1 1/2 hours). Add softened butter, remaining sugar, salt, yolks, cardamom and 3 more cups of flour. Mix well. Add last 1/4 cup flour to your counter or board for kneading. Knead until smooth and elastic. Place in greased bowl and let rise untl doubled again (another 1 1/2 hours). Split the dough in two. Cut each half into thirds. Roll each piece until around 16 inches long. Pinch 3 strips together at the top and braid them together. Do the same with the other half of the dough. Let both braids rise for another 45 minutes. Brush the tops with 3 tsp of sugar and 1 tbs milk. Bake for 25-30 minutes.
