Lemon Pound Cake

It doesn't take a lot of lemon to add some zing to this pound cake recipe. A slice of this moist cake could be served with tea or coffee.

Ingredients:

  • 1 lbs butter
  • 3 cups sugar
  • 8 eggs
  • 2 tbs lemon juice
  • 4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt

Preparation:

eheat oven to 350F. In a large bowl, cream together the butter and sugar. Add lemon juice and eggs. Mix well. In another bowl, sift together flour, baking powder and salt. Gradually add the flour mixture to the butter mixture. Pour batter into a lightly greased loaf pan and bake for an hour.
