Orange Coffee Cake

A good coffee cake recipe for when company comes over. It even has a zesty orange streusel for the topping. The warm cake will just melt in your mouth.

Ingredients:

  • Cake:
  • 1/4 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 1 1/2 tsp orange zest, grated
  • 1/4 cup orange juice
  • 1/4 cup milk
  • 1 1/2 cups flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • Topping:
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 tsp cinnamon
  • 1/4 cup butter
  • 1 1/2 tsp orange zest, grated

Preparation:

Preheat oven to 375F. Mix shortening, sugar, egg and orange zest thoroughly. Stir in orange juice and milk. Sift together flour, baking powder and salt. Add to egg mixture. Pour into a greased 9-inch cake pan. In a small bowl, mix sugar, flour, cinnamon and orange zest. Cut in butter until the mix looks like coarse crumbs. Sprinkle over the batter. Bake for 25-30 minutes.
