Basic Coffee Ice Cream

Another simple recipe for making your own coffee-flavored ice cream, this time without the need for an ice cream maker. Takes a bit more work, but the results are worth it.

Ingredients:

  • 1/4 cup sugar
  • 2 tbs instant coffee crystals
  • 1 tbs cornstarch
  • 2 tbs butter
  • 1 cup milk
  • 1 tsp vanilla
  • 1 14-oz can of condensed milk (sweetened kind)
  • 2 cups whipping cream

Preparation:

In a small pot, mix together sugar, cornstarch, coffee crystals and butter and heat until blended and melted. Add milk and heat until just boiling. Cook for about 2 minutes (while stirring) until it started to thicken up. Take off of heat.

Mix in vanilla, then let the mixture cool completely. Add can of sweet condensed milk, and stir until mixed. In another bowl, beat whipping cream until you get stiff peaks. Fold whipped cream into earlier milk mixture. Pour into a 9-inch square pan and freeze for around 6 hours, or until nicely firm. Scoop and serve.
