Question: What is Dutch processed cocoa?
Answer: Dutch processed cocoa powder has been treated with an alkali, which produces a milder tasting cocoa. It's not necessarily a higher-quality form of powdered cocoa. You can usually use either natural or Dutch cocoa in many recipes, depending on your preference. But some baked goods may not rise properly because the alkaline nature of the cocoa can throw off the chemical balance of your mixture (unless of course, the recipe actually calls for Dutch processed cocoa).
