Tomato & Cheese Tea Sandwiches Recipe

This quick and easy tomato and cheese tea sandwich recipe includes smoked cheddar cheese, ripe tomato, fresh cilantro, white bread and mayo. Serve them at afternoon tea during the summertime, when tomatoes are ripe and juicy.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 16 tea sandwiches

Ingredients:

  • 8 slices white bread
  • 2 Tbsp. mayonnaise or mayo alternative
  • Chopped, fresh cilantro, to taste
  • 2 thinly sliced ripe tomatoes
  • Sea salt and ground black pepper, to taste

Preparation:

  1. Spread about 1/2 tablespoon of mayo on each of four slices of bread. Top with cilantro.
  2. Add a layer of cheddar cheese and a layer of tomato slices to each piece of bread with mayo on it.
  3. Sprinkle with salt and pepper.
  4. Top the tomato slices with the remaining two slices of bread.
  5. Remove the crusts and slice the sandwiches two times, diagonally, to make four tea sandwiches from each large sandwich.
