Eggnog Cheesecake

A rich and velvety cheesecake that's easy to make, and has the eggnog flavour that is perfect for the holiday season. There is actually eggnog in it, so make sure you have some on hand.

Prep Time: 30 minutes

Cook Time: 1 hour, 00 minutes

Ingredients:

  • 1 cup graham cracker crumbs
  • 2 tbs sugar
  • 3 tbs butter, melted
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 8-oz pkg cream cheese, softened
  • 1 cup sugar
  • 3 tbs flour
  • 1 cup eggnog
  • 2 eggs
  • 3 tbs rum (or rum extract)
  • pinch of nutmeg
  • pinch of cinnamon

Preparation:

Preheat your oven to 325F

In a small mixing bowl, stir together the first 5 ingredients (cracker crumbs, sugar, butter and spices). When all combined, press into the bottom of a 9-inch spring form pan.

Bake this crust for 10 minutes, then remove from the oven to cool. Raise the oven temperature to 425F while you keep going with the cheesecake filling.

Blend together the remaining ingredients, and pour into the cooled cracker crumb crust. Bake for 10 minutes, then reduce the heat down to 250F and keep on baking for another 45 minutes.

Take cheesecake out of the oven, and loosen it up from the rim of the pan. Then let it cool the rest of the way before taking the rim off.
