Definition: Kombucha is a form of fermented tea. It is made with a brewed, sweetened tea or tisane / herbal tea and a mushroom-like organism called a zoogleal mat. Kombucha is also known as "mushroom tea" because of the mushroom-like appearance of the zoogleal mat.

To make kombucha, a portion of a zoogleal mat "mother" (akin to the "mother" used to make vinegar) is used to ferment the sugars in a sweet tea or sweetened tisane. After fermentation, the zoogleal mat is removed and the kombucha may be blended with other ingredients (such as tea, fruit juice or spices) and/or pasteurized.

Kombucha is naturally effervescent. Unflavored kombucha has a vinegar-like taste, which is why kombucha is also known as "vinegar tea."
