Baked Fudge Pudding

A pudding that baked like a cake, soft and gooey inside and crispy on the top. The trick is to bake your fudge pudding inside a water bath. This fudge pudding is delicious on it's own, or served with some ice cream.

Ingredients:

  • 2 cups sugar
  • 1/2 cup flour
  • 1/2 cup cocoa powder
  • 4 eggs, lightly beaten
  • 1 cup butter, melted
  • 1 tsp vanilla
  • 1 cup almonds, chopped

Preparation:

Preheat oven to 325F. Blend sugar, flour and cocoa in a mixing bowl. Stir in eggs, butter, vanilla and nuts. Pour batter into a 9-in square bake pan. Put water in a pan large enough to hold the one with the batter. Place the batter pan in the water, and bake for 1 hour and 20 minutes. Surface of the pudding with be cracked. Remove from the water bath to cool. Do not cut until it's cooled at least to room temp.
Serves 6
