This variation on a bar staple is richer and spicier than traditional simple syrup. It was created for Spiked Ginger Coffee, but it also tastes great with masala chai and other hot or cold drinks. Since it's a liquid sweetener, it's ideal for sweetening and flavoring cold coffee, cold tea and chilled cocktails.

Yield: Makes about one cup
Ingredients:
- 1 cup semi-packed brown sugar
- 1 cup water
- 1 peeled, sliced piece of ginger, about the size of a large grape
Preparation:
- Combine all ingredients in a small saucepan.
- Boil for 30 minutes.
- Remove from heat and strain the ginger.
- Allow to cool, and then store in an airtight container in the fridge for up to six months.
