This vegan version of Cafe au Lait is rich, creamy and lactose-free. It uses soymilk in lieu of water and milk to achieve a pleasing texture and full flavor.

Ingredients:
- 1 c. hot soymilk (or other dairy alternative, such as cashew milk or almond milk)
- 1 heaping tsp. quality instant coffee (such as Starbucks' VIA or Trader Joe's instant Colombian coffee)
- Unrefined sugar or other vegan sweetener (to taste)
Preparation:
