An image of honeybush (a relative of rooibos) and honeybush-infused vodka.

This naturally flavored vodka makes an incredibly versatile cocktail ingredient. Mix with spicy, citrusy, berry, chocolaty, creamy or otherwise sweet ingredients.

Sweet, woody rooibos and its honey-tinged relative honeybush blend beautifully with spices, citrus, berries, chocolate and cream. Likewise, this easy rooibos-infused vodka recipe make a great base for a range of cocktails!

Prep Time: 10 minutes

Cook Time: 12 hours

Total Time: 12 hours, 10 minutes

Ingredients:

  • 750 mL neutral-tasting vodka (a.k.a. "a fifth")
  • 6 level tablespoons good quality rooibos or honeybush (You can use flavored rooibos / honeybush if you want, but unflavored versions are more versatile for mixing into cocktails.)
  • Simple syrup (optional, to taste)

Preparation:

  1. Using a funnel, guide the rooibos / honeybush into the bottle of vodka.
  2. Replace the cap of the bottle and shake well.
  3. Steep for about 12 hours, or to taste.
  4. Pour the mixture through a fine mesh strainer and funnel into a different bottle. If you plan to add simple syrup, use a larger bottle. If desired, filter a second time with cheesecloth.
  5. Discard the rooibos / honeybush. Add simple syrup to the vodka if desired.
  6. Serve straight, on the rocks or as a base for more complex cocktails.

Makes about ten two-ounce servings or about 20 two-ounce servings.
