This vegan mate latte is a twist on classic yerba mate lattes. It uses soymilk (or other vegan, lactose-free milk substitutes) in lieu of regular milk and agave nectar in lieu of honey or sugar.

Ingredients:
- 5 ounces simmering water
- 3 tbsp. regular or vanilla soymilk (or other non-dairy milk substitute, such as almond milk, coconut creamer or rice milk)
- 1 tbsp. loose-leaf yerba mate, or two yerba mate teabags
- Agave nectar (to taste)
Preparation:
- Combine the simmering water and the soymilk or other milk substitute.
- Place the yerba mate into an in-cup infuser. Place the infuser into a mug and slowly pour the liquid over it, allowing the liquid to seep in as you would when using a manual drop coffee filter.
- Brew for four to six minutes, depending on desired strength.
- Add agave nectar to taste.
- Stir with a spoon, or froth with a frother for a more latte-like texture.
