This healthy yerba mate latte variation is made with soymilk and agave nectar.

This vegan mate latte is a twist on classic yerba mate lattes. It uses soymilk (or other vegan, lactose-free milk substitutes) in lieu of regular milk and agave nectar in lieu of honey or sugar.

Prep Time: 3 minutes

Cook Time: 6 minutes

Total Time: 9 minutes

Yield: Makes one serving

Ingredients:

  • 5 ounces simmering water
  • 3 tbsp. regular or vanilla soymilk (or other non-dairy milk substitute, such as almond milk, coconut creamer or rice milk)
  • 1 tbsp. loose-leaf yerba mate, or two yerba mate teabags
  • Agave nectar (to taste)

Preparation:

  1. Combine the simmering water and the soymilk or other milk substitute.
  2. Place the yerba mate into an in-cup infuser. Place the infuser into a mug and slowly pour the liquid over it, allowing the liquid to seep in as you would when using a manual drop coffee filter.
  3. Brew for four to six minutes, depending on desired strength.
  4. Add agave nectar to taste.
  5. Stir with a spoon, or froth with a frother for a more latte-like texture.
