This pungent and richly colored cardamom infusion is delicious after meals, great for soothing sore throats and a good caffeine-free replacement for masala chai.

This spiced cardamom herbal chai recipe is both piquant and sweet. Like “ginger tea” with honey, many people use this kind of spiced, caffeine free "tea" (or tisane) to soothe sore throats and warm up during cool weather. Like traditional masala chai, this spiced herbal infusion is delicious iced.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 2 cups

Ingredients:

  • 2 cups water
  • 6 lightly crushed green cardamom pods
  • 2 whole cloves
  • 2 cracked black peppercorns
  • 1/2 tbsp. chopped ginger root
  • 1 tbsp. honey or agave nectar (use less if you prefer less sweet beverages)
  • Milk or milk substitute (optional, to taste)

Preparation:

  1. Bring the water to a simmer.
  2. Add the spices.
  3. Keep at a simmer for 30 minutes, stirring occasionally.
  4. Remove from heat.
  5. Stir in the honey.
  6. Add milk to taste (optional).
  7. Serve. Makes about 1.5 cups.
