Salem Apple Cider

A popular New England style of cider, with a bit of brandy to keep you warm on those chilly fall nights.

Ingredients:

  • 1 tbs whole allspice
  • 1 3-inch cinnamon stick
  • 3 cups apple juice
  • 1 cup orange juice
  • 1 tsp honey
  • 1/2 cup brandy

Preparation:

Tie the loose allspice berries and broken cinnamon stick into a piece of cheesecloth, and drop in a large saucepan along with all the other ingredients (except for the brandy). Bring to a boil, then reduce heat down to a low simmer. Let steep on simmer, covered, for about 15 - 20 minutes. Take out the spice bag, and stir in brandy. Serve immediately. Makes enough for 5-6 people.
