Cucumber Sandwiches

Cucumber sandwiches are very traditional for afternoon tea, and not hard to make at all. The white wine vinegar adds a bit of zing to the cool cucumber slices.

Ingredients:

  • 1 English cucumber
  • White wine vinegar
  • Butter, soft

Preparation:

Peel and slice the cucumber. You can use a regular cucumber, but the long English ones have fewer seeds. Drizzle the cucumber slices with wine vinegar and let sit in a shallow dish for 1/2 hour. Drain them of any excess vinegar, and pat dry with a paper towel.

Make sandwiches with 1 or 2 layers of cucumber slices, on thin bread with a light spread of butter. Slice sandwiches diagonally into quarters and serve with afternoon tea.
