High Tea Oatmeal Scones

Quick oats make these very hearty scones, but the generous quantity of chocolate chips really lighten them up. Great on their own, or with any spread you like.

Ingredients:

  • 2 cups flour
  • 4 tbs baking powder
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 1 1/4 sticks butter
  • 2 cups semi-sweet chocolate chips
  • 2 cups quick oats, uncooked
  • 4 eggs, beaten
  • 1/2 cup heavy cream
  • 2 tbs sugar

Preparation:

Preheat oven to 425F. Mix together flour, brown sugar, baking powder and salt in a large bowl. Cut in butter until mixture is like large crumbs. Stir in chocolate and oats. Save aside 2 tbs of beaten egg. Add the rest of the egg and the heavy cream to the dry ingredients. Roll dough out onto floured surface, and roll to 1/2-inch thick. Cut into 2-inch diamonds. Brush with left-over egg and sprinkle with sugar. Bake for 10 minutes or until scones are golden brown.
Makes 36 scones
