Texas Tea Cakes

You don't even have to live in Texas to make these biscuits. They are a light and flaky tea cake, that would go well with fruit preserves or clotted cream.

Ingredients:

  • 4 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup shortening
  • 2 eggs
  • 1/2 cup buttermilk
  • 2 tsp vanilla

Preparation:

Preheat oven to 375F. Mix all ingredients into a firm dough. Roll out, and use a cookie cutter to make circles. Bake until brown and golden.
