Honey Tea Bread

A lightly sweetened bread that would be excellent with fresh butter or clotted cream. Not only tasty to serve at afternoon tea, the bread is actually flavoured with tea as well.

Ingredients:

  • 10 oz flour
  • 2 eggs, lightly beaten
  • 1 cup strong tea
  • 3 oz honey
  • 8 oz raisins
  • 1/2 tsp mixed spice
  • 1 tbs baking powder

Preparation:

Preheat oven to 350F. Dissolve the honey into the tea, then pour over the raisins in a mixing bowl. Let sit for 2 hours. Stir in the eggs. Blend the dry ingredients together, then mix into the raisin mixture. Pour batter into a loaf pan and bake for about 70 minutes.
