Classic Meringues

These meringues are a melt-in-your-mouth treat. They are as light as a cloud, but are wonderfully sweet as well. A good choice when serving a light high tea.

Ingredients:

  • 4 egg whites
  • 1/4 tsp salt
  • 1 1/4 cup castor sugar
  • 1/2 tsp vanilla

Preparation:

Preheat oven to 225F. Beat egg whites and salt until they form soft peaks. Add half the sugar and continue beating until you have stiff peaks. Fold in the rest of the sugar and vanilla. Spoon mixture onto a greased baking sheet. Bake for 2 hours.
Makes 24 Meringues
