Simple shortbread is a must when serving afternoon tea, usually served in long slices. The subtle flavour of shortbread won't overpower the enjoyment of your tea.
Ingredients:
- 1 1/4 cup flour
- 1/2 cup caster sugar
- 1/2 cup unsalted butter
- 1/2 cup rice flour
- 1/4 tsp baking powder
- Pinch of salt
Preparation:
Preheat oven to 325F. Cream butter and sugar together until fluffy. Stir in the two flours, baking powder and salt. Press mixture into a greased 8-inch cake tin. Smooth out the top, and prick over the surface with a fork. For easier cutting after it's baked, score the dough into 8 slices before putting in the oven. Bake for 45-45 minutes until golden brown.
