Moroccan Mint Tea is a blend of green tea (usually Chinese Gunpowder Green) and mint (usually spearmint). In the United States, most variations involve the use of a different green tea, such as Houjicha. However, in Morocco, Moroccan Mint is sometimes made with lemon verbena, blended with wormwood or sweetened with orange blossoms.
With Fez, Steven Smith Teamaker combines these two approaches to blending mint tea. A spring-harvested Chinese green tea is blended with Oregon spearmint and Australian lemon myrtle (an herb with a flavor that's similar to lemon verbena) for a mellow, refreshing variation on Moroccan Mint.

Tasting Notes
Aroma -- Far lighter and more refreshing than most commercially available Moroccan Mint blends
Flavor -- Subtle, balanced, lighter and more delicate than blends with Gunpowder green tea; notes of spring peas and baby bok choy, slightly lemony
Aftertaste -- Minty, lightly astringent, very ethereal compared to traditional Moroccan Mint

Overall Opinion
If you prefer to make Moroccan Mint with a teabag or pre-blended tea instead of from fresh herbs, then Fez is a great choice. It's nuanced and refreshing, and it's delicious iced. However, I would not recommend it to those who like the roasty notes in dark Gunpowder green or Houjicha blends.
