Your Masala Chai Tea Recipe
4 cups water
12 cloves
10 cardamom pods
8 black peppercorns
2 sticks of cinnamon
1" fresh ginger, sliced 4 times (to 1/4" each)
1 Tbsp Assam tea
1 cup whole-fat milk or coconut milk
4 Tbsp honey
Bring water, spices and ginger root to a boil for 5 minutes. At the end of boiling, add tea. Lower heat and simmer 15 minutes. Add milk and honey and bring back up to a boil for 2 minutes to integrate flavors. Turn heat off. Strain into cups and slurp. makes 4 cups

Watching a myriad of chai videos of chaiwallahs, reading and experimenting with countless recipes from India natives, Americans and chefs across the world, this is the one that is the tastiest and stays with the Indian customs of making chai masala. I had to make sure that everyone, including my small children loved it as well (the decaffeinated version, that is).
Advice
- to give the chai a full-bodied flavor, always use whole fat or preferably half-and-half milk.
- Coconut milk is a good alternative that will not curdle when heated.
- if wanting a decaffeinated version, substitute Rooibos tea for the Assam and follow the same instructions above.
