Makes 12 cupcakes. Takes 30 minutes preparation time
150g (5 oz) lightly salted butter
150g ( 5 oz) caster sugar
175 G (6 oz) self raising flour
1 tsp vanilla extract
1 tsp of matcha green tea powder
-Line a 12-section bun tray with paper or foil cake cases or stand 12 silicone cases on a baking sheet
-Put all the ingredients into a bowl and beat with a hand-held electric whisk for 1-2 mins until light and creamy
-Divide the cake mixture between the paper, foil or silicone cases.
- Bake in a preheated oven 180°C (350 ° F, gas mark 4), for 20 mins or until risen and just firm to the touch.
-Transfer to a wire rack to cool
Tips and Tricks
- For domed tops that can be easily sliced off for wings, add 1 tsp baking powder to the cupcake recipe.
