Herb Infused Iced Matcha
- Here is Tea by Algabar's recipe for Herb Infused Iced Matcha. There is a photo on our blog at http://algabarblog.blogspot.com/2009/04/recipe-herb-infused-iced-matcha.html Ingredients 1 small sage leaf 1 to 2 sprigs of thyme 5 large mint leaves 4 bamboo scoops of Matcha, or 1 tsp 2 cups water, just boiling 1 tsp simple syrup (1 part sugar to 1 part water) 6 ice cubes Makes 2 servings. 1. Place the herbs in the bottom of a teapot. 2. Pour just boiling water over the herbs and infuse for 5 minutes. 3. Using a strainer, pour the liquid into a medium sized bowl. 4. Add Matcha powder and whisk until completely blended. 5. Place half of the ice cubes in each glass, fill with herb Matcha tea and sweeten to taste with simple syrup. Enjoy!

My Friend's Family Chai
- Ingredients: 3 Tbsp loose black (Assam, Keemun) tea 1/2 tsp fennel seed 1 cup water 1/2 Tbsp fresh cut ginger 1 cup milk 1 tsp sugar Dash of clove and nutmeg Directions: Combine all ingredients. Cook together in a pot on the stove until just boiling (don't let it continue to boil). Strain and serve.

Red Bean Matcha Latte
- During a recent trip to Japan, I tried a matcha latte (http://coffeetea.about.com/od/preparationandrecipes/ss/SummerGreenTeaLatte.htm) that was flavored with adzuki (red beans). About two tablespoons of red beans were added after the (roughly 12-ounce) drink was blended, almost like a milkshake mix-in or the tapioca in boba tea (tapioca pearl tea). It was delicious!
